  1. Eggplant: 2.000000 1. Peel and dice the eggplants

  3. Olive oil: 3.000000 tbsp 3. Heat up the olive oil in a large skillet
  4. 4. Fry the eggplants on low-medium heat with the lid on
  5. Garlic: 1.000000 clove Shallot: 2.000000 5. Peel and slice the shallots in half rings. Peel dice and crush the garlic
  6. 6. Add the diced bell peppers and crushed garlic to the eggplants and stir. Let the veggies simmer on low heat for a couple of minutes
  7. Orzo: 300.000000 g Salt: to taste 7. Bring 3:1 water:orzo to a boil, add some salt and cook the orzo al dente in about 10 minutes
  8. 8. Add the sliced shallots to the veggies and stir
  9. Mediterranean herbs: to taste Pepper: to taste Salt: to taste 9. Season the veggies using salt, pepper and the mediterranean herbs to taste
  10. Olives: 200.000000 g 10. Dice the olives roughly, add them to the veggies and stir
  11. 11. Drain the orzo and rinse with cold water to stop the cooking process
  12. 12. Add the orzo to the veggies
  13. Feta: 200.000000 g Olive oil: to taste Panko (breadcrumbs): 140.000000 g 13. Finely dice the feta cheese, add the panko, some olive oil and mix
  14. 14. Add the feta to the veggies and pasta and stir
